Students will continue to learn and practice egg cookery as well as beginning to learn quick breads.  Students will also begin to learn planning skills through making Halloween gingerbread houses.

Week 10/11 – 10/15

Students will take the ServSafe FoodHandler test this week.

Students will begin learning how to cook eggs and use equipment in the kitchen while building technical vocabulary.

Week of 10/4 – 10/8

Students will learn about cleaning and sanitizing in the commercial kitchen.  They will learn how to use the 3-compartment sink for dishwashing and why labeling everything is so important.

Week of 9/27-10/1

Continue learning about cross-contamination and cleaning and sanitizing the right way in the kitchen.  Fried rice lab will be on Tuesday and Wednesday.

Students will learn about the dangers of cross-contaminations and how to prevent it from happening in both commercial and home kitchens.

Week of 9/13-9/17

We will be learning and working through ServSafe Foodhandler part 3.  Time and temperature control will be the focus.  Lab planning will be introduced.

Week of 9/7-9/10

Students will work on part 2 of ServSafe Food Safety and Sanitation.

Week of 8/30 – 9/3

Students will continue to learn about food safety and sanitation.

8/23 – 8/27

Leslie Rasco Intro CA 07, Intro CA 14 August 23, 2021 0 Comment

Students will begin learning about historic culinary contributors.

Students will begin ServSafe Foodhandler training.

Weeks 8/16 – 8/20

Leslie Rasco Intro CA 01, Intro CA 03, Intro CA 11 August 16, 2021 0 Comment

Students will work through various stations while getting to know class rules and procedures.  Stations will include: Who am I coffee cup, Rules and Procedures, Word for the Year, and what is my personality.
